400g seeded watermelon flesh
2 tbsp sliced pickled green chillies
100g pitted kalamata olives
200g feta

good olive oil
small handful mint leaves
small handful flat-leaf parsley leaves
lemon wedges to serve

Cut the watermelon into dice or wedges. Combine the watermelon, chillies and olives in a salad bowl or on a large serving dish. Dice or slice the feta and gently fold this in, then pour over a generous stream of olive oil and scatter over the herbs. Accompany with lemon wedges.
